The restaurant scene in Louisiana is a tale of two states. Southern Louisiana restaurants include the Cajun and Creole delicacies for which the state is justifiably famous. Many of the locals still speak a French dialect in addition to thickly accented English, and the food retains its French flair. Classic French sauces and slow cooking combine with a generous helping of spice and an abundance of fresh local seafood to create one of the great regional American cuisines. North of Baton Rouge, the Louisiana menu changes to reflect more typical southern tastes. Comfort foods such as fried chicken and pillowy biscuits with gravy are features on many north Louisiana menus. Regardless of cuisine, New Orleans is considered one of the food capitals of the world.
