New Mexico is a state where many different unique cultures have come together, and the cuisine and flavors found in New Mexico restaurants reflect the meeting and blending of those cultures. For starters, one can't talk about New Mexican cuisine and New Mexican flavors without bringing up Tex-Mex. New Mexico puts its own spin on Tex-Mex with its famous chile peppers, making for some extremely eye-watering, sinus-clearing hot dishes. However, Mexican culture isn't the only culture that's influenced the flavors of food here. Don't forget that long before the Europeans brought their flavors to the United States and Mexico, Native Americans had their own unique cuisines. Major influences in New Mexican cuisine include the foods of the Navajo, Mescalero and Chiricahua tribes. There are even some restaurants in Albuquerque that still specialize in traditional Native American foods.
